There is only one artisan mustard maker left in Burgundy, Edmond Fallot in Beaune, although you can find their mustards in most of the delicatessens in Burgundy, and they have a delightful shop and tasting centre in the Old Quarter of Dijon on Rue de la Chouette, next to Notre Dame de Dijon. They still make their mustards in the traditional manner, grinding the seeds between mill stones. If you want your mustard made from Burgundy mustard seeds then you need to look for Moutarde de Bourgogne, otherwise the seeds likely come from Canada. In Beaune, a visit to the factory at 31 Rue du Faubourg Bretonneire is interesting and rewarding, and again there is an attractive boutique where you can taste the products after your visit.
